A seat at the pass in kitchens that are normally closed to guests. You watch a starred brigade work through service while a tasting menu is built plate by plate in front of you, with the head chef or sous chef talking through each course. Chef's tables are limited to one or two seatings a night and are released on the restaurant's own calendar, so we work to their release dates rather than yours.

Availability moves with each restaurant's booking window. These are the five cities and the style of table you can expect in each.
A counter beside the passe in a Right Bank institution: ten to twelve courses, a cellar of Burgundy and Champagne, and a tour of the pastry kitchen.
Eight seats of hinoki cypress in Ginza or Azabu, the itamae serving each piece directly to your hand, paired with junmai daiginjo.
A table inside the test kitchen: fermentation larder tour, twenty small courses and a juice pairing as serious as the wine list.
The parrilla in a Michelin-starred asador above the city, cooking turbot and txuleta over embers while you eat at the grill.
Emilian tasting menus with a balsamic vinegar loft visit, or a Chianti kitchen counter with the chef's own estate wines.
We check which kitchens have a chef's table open in your window and shortlist three.
Allergies, vegetarian and Jain requirements go to the kitchen in writing, in the local language, two weeks ahead.
Arrive thirty minutes early for the kitchen tour, then take your seat for service.
Signed menu, and a note of the wines poured so you can source them at home.
Year-round. Tokyo is at its best in autumn and winter, San Sebastián from May to October, Copenhagen when the fermentation larder is fullest in late summer.
No one can guarantee a named three-star table. We confirm one of your three shortlisted kitchens in writing before you pay, and you approve it.
Yes. Every kitchen we work with prepares a full vegetarian tasting menu. Jain and no-onion-no-garlic menus are arranged in Paris, Copenhagen and Italy with three weeks' notice; Tokyo sushi counters are the hardest to adapt.
Typically two to eight. A few kitchens seat ten to fourteen; sushi counters are often limited to two or four.
A standard pairing is included. Prestige and collector pairings are quoted separately, as the cellar prices them per bottle.
Smart; jacket for men in Paris and Modena. Closed shoes are required in any kitchen you walk through, for safety.
Three months is comfortable. Tokyo counters and the best Paris tables open bookings on a fixed date each month and fill within hours.
Restaurants charge a full per-head deposit that becomes non-refundable 14 to 30 days out, depending on the kitchen. We tell you the exact date in writing.
Most chef's tables set a minimum age of ten to twelve. We will tell you the specific policy of the kitchen before confirming.
